Cobb Shrimp Lettuce Cups - Prime Shrimp

A busy day is no longer an excuse for another boring ham and cheese sandwich. Spice it up with these super quick and ridiculously easy shrimp lettuce wraps. Not only is this a low-carb, high protein, healthy lunch, but it is also truly delicious.

You can always count on her for bright, clean, and deceptively accessible meal ideas, so we hoped that our Signature Seasoned Shrimp would be right up her alley. She turned them into this excellent easy lunch recipe for shrimp lettuce wraps that are quick to make on even your busiest weekday.

As Aubrey writes on her Instagram, “5 minutes is all you need to create these Cobb Shrimp Lettuce Cups. I cooked a package of my favorite easy protein, Prime Shrimp .... Then layered on butter lettuce cups with avocado, tomato, and a creamy yogurt ranch.”

Shrimp Lettuce Wraps

Ingredients

  • 1 head butter lettuce
  • ½ pouch Prime Shrimp Signature, cooked and chilled
  • 1 avocado, sliced
  • 6 cherry tomatoes, halved
  • ¼ cup Greek yogurt
  • ½ tbsp ranch seasoning
  • Salt and pepper to taste

Directions

  1. Pull lettuce leaves off head of butter lettuce and wash. Arrange leaves on plate in 3-4 stacks of 2-3 leaves.
  2. In a small bowl, combine Greek yogurt, ranch seasoning, salt and pepper.
  3. Distribute avocado slices, tomatoes, and shrimp evenly across your lettuce stacks. Drizzle with ranch seasoning.
  4. Wrap each stack up like a soft taco and enjoy!
