Ingredients

  • 1 package Prime Shrimp Signature

  • 4 large flour tortillas

  • 2 cups cooked Mexican rice

  • 1 cup black beans, rinsed and drained

  • 1 cup diced tomatoes

  • 1/2 cup corn (fresh or frozen)

  • 1 cup shredded cheese

  • Guacamole for serving

Directions

  1. Cook Prime Shrimp according to package directions.

  2. Warm tortillas in the microwave or on a skillet.

  3. Layer rice, black beans, tomatoes, corn, cheese, and cooked shrimp in the center of each tortilla.

  4. Fold the sides of the tortilla in, then roll tightly from the bottom up.

  5. Optionally, sear on a panini press for added crunch.
