BBQ Shrimp Quesadilla

Here in New Orleans, BBQ shrimp has a special place in our hearts. Unlike your average barbeque, New Orleans-Style BBQ Shrimp forgoes the classic tomato or vinegar-based barbeque sauce for a buttery, Worcestershire-spiked sauce that brings a bold flavor and a gentle spiciness. Although traditionally served with French bread or over grits, it also pairs beautifully with a mild white cheese. 

This shrimp quesadilla recipe is perfect when you're craving a flavorful, cheesy, and quick dinner. Ready in just 15 minutes, this recipe takes advantage of the Prime Shrimp cook-in-pouch method to pack this quesadilla with fresh-cooked protein. You'll ensure minimal waste and maximal flavor when using the extra butter sauce to cook your quesadilla.

Ingredients

  • 1 pouch Prime Shrimp New Orleans Style BBQ  

  • 2 large flour tortillas

  • 2 cups of shredded white cheese (fontina, white cheddar, or white american work well)

    1. Cook Prime Shrimp according to package directions. Separate shrimp from butter sauce and set aside. Optionally, you can roughly chop the shrimp into smaller pieces. 

    2. On a clean work surface, lay out one flour tortilla. Sprinkle a handful of shredded cheese evenly over one-half of the tortilla. Then, layer on some cooked shrimp and another sprinkle of cheese. Fold the tortilla in half to enclose the filling.  

    3. Heat a large skillet or griddle over medium heat. Pour in enough of the garlic butter sauce to cover the bottom of the pan with a thin layer. Place the assembled quesadilla in the skillet and cook for 2-3 minutes on each side until the tortilla is golden brown and crispy and the cheese is melted and gooey. Repeat this process for the remaining tortillas and filling.  

    4. Once the quesadillas are cooked, transfer them to a cutting board and let them cool for a minute so the cheese sets. Then, use a sharp knife or pizza cutter to slice each quesadilla into wedges or halves.
