Ina Garten’s Shrimp and Orzo Pasta Salad

Ingredients

  • 1 pack Unseasoned Simply Shrimp
  • ½ pound orzo pasta (rice-shaped pasta)
  • juice of 2 lemons
  • ½ cup minced scallions, white and green parts
  • ½ cup cup chopped fresh dill
  • ½ cup chopped fresh flat-leaf parsley
  • 1 cucumber, seeded and diced
  • ¼ cup diced red onion
  • ½ pound feta cheese, diced
  • olive oil
  • salt and pepper

Directions

  1. Bring a pot of water to a boil, add orzo and simmer for 9-11 minutes or as directed on the package
  2. Whisk together the lemon juice, ¼ cup olive oil, and a pinch each of salt and pepper.
  3. Drain pasta and pour lemon juice mixture over hot pasta. Mix well.
  4. Add the scallions, dill, parsley, cucumber and onion and feta to the ozro. Lightly toss to combine. Allowing salad to come to room temperature for up to an hour or chilling overnight will help flavors combine..
