With a small space but a large following, The Nell Shell—a seasonal pop-up takeout restaurant specializing in lobster rolls and tinned fish—was looking to expand their menu of lobster rolls with a more affordable, divergent seafood offering. Prime Shrimp’s sous-vide pouches allowed them to easily add 3 new sandwiches to menu, delighting customers while maximizing space.
Challenges:
Incredible lobster rolls made The Nell Shell a huge success in their debut season. Heading into season two, they were looking to add an item to their menu but were space and facility constrained. Additionally, the lack of quality and consistency in their previous shrimp supply did not make it a viable option for their pop-up operation.
Solutions:
The Nell Shell sourced three flavors of Prime Shrimp—Garlic Herb Butter, New Orleans-Style BBQ, and Simply Unseasoned—to add three unique new sandwiches to their rotating specials menu, in addition to a chilled shrimp and orzo salad to their grab and go menu.
