It is incredibly straightforward - romaine lettuce, cheese, croutons, and dressing - but infinitely customizable. You can dial in the level of difficulty to suit almost any occasion by adjusting the ratio of store-bought to homemade components on the final plate.

Easy Shrimp Caesar Salad

Ingredients

  • 4 romaine lettuce hearts
  • ½ cup parmesan cheese, grated or shaved
  • 6 ounces of croutons (store bought or homemade)
  • caesar dressing (store bought or homemade)
  • One pack Lemon and Cracked Pepper shrimp
  • ½ loaf of day old bread or crusty baguette
  • 2 tablespoon olive oil
  • 1 teaspoon granulated garlic
  • kosher salt and fresh cracked pepper to taste
  • 1 cup mayonnaise
  • 1 clove of garlic, minced
  • ½ cup grated parmesan cheese
  • juice of 1 lemon
  • 4 anchovy filets (or 1 teaspoon anchovy paste) - optional but highly recommended
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dijon mustard
  • salt and pepper to taste

Directions

  1. Preheat the oven to 350°F
  2. cut or tear bread into ¼ inch pieces
  3. toss bread with olive oil, garlic, salt and pepper
  4. placed on rimmed baking sheet and bake until golden brown and crunchy, about 12 minutes
  5. whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce
  6. add mayonnaise, grated cheese, salt and pepper. Whisk to combine
  7. cook pouch of Lemon and Cracked Pepper shrimp according to package direction, let cool while assembling the salad
  8. cut or tear romaine leaves into 2 inch pieces; season with a squeeze of lemon juice, salt and pepper; lightly toss to combine
  9. add croutons and dressing, lightly toss to combine (again)
  10. plate dressed lettuce and croutons, top with shaved parmesan and cooled Lemon and Cracked pepper shrimp. ENJOY!
